Kithul treacle is made from sap extracted from the inflorescence of the kithul palm grows in Sri Lanka. Once the sap is collected it is boiled over an open wood fire until it reduces to a sticky and intensely sweet syrup known as treacle with the color and thickness of honey. The treacle a sweet syrup which is dark brown in color, thick and sweet in flavor, with a taste resembling dates with a slight hint of caramel. Kithul PANI (treacle) as it is called in Sri Lanka, has been long loved and traditionally used as a natural/ herbal sweetener. This healthy syrup is water-soluble, hot or cold, which makes it’s convenient to use as paste, liquid sweetener & raw material for some food items such as Watalapm the desert dish.
